Simple dinner tonight, after a day of running around town.
Yesterday we added an impulse buy to the cart... a package of Buitoni Spicy Beef and Sausage ravioli. Yes, they were sampling, and giving out $1 off coupons. My first thought was serving it with vodka sauce, but Mr Click suggested I do a buttery pan-fry with them. So I started to do just that.
I planted a few basils today, and had the pinches from them. I was baking a lemon cake, and had a little lemon zest as well. I've been buying the most amazing little leeks at the fresh market, and I had walnuts in the pantry. Sounds like the backbone of an impromotu sauce...
I boiled the raviolis till they were nearly done, then dipped them out of the water and tossed them into a frypan with the butter and leeks till they browned a little. Then I added thebasil, lemon, and a handful of walnuts. I realized I had a drizzleof heavy cream in the fridge, and I used that to finish the sauce. cook a little more, then plate up. Grate a little pamigiano-reggiano into the bowl, pour a glass of wine, and done. A light Sunday night supper.
Lemon Buttermilk Cake is for dessert, have not tried it yet, but WOW on the batter. I think it's a separate post unto itself.
